today's
special :
Goat Cheese and Herb Ravioli
A
slight variation on the traditional ricotta cheese-filled ravioli;
personally, I find ricotta somewhat bland, so I've added a bit of goat
cheese, which has a nicer flavor and smooth texture. You could sauce
this simple ravioli with pretty much anything; I've used a basic tomato
sauce, with a little bit of crushed red pepper to spice things
up a bit.

4
eggs
3½ cups flour
1 tsp salt
10 oz. goat cheese

salt and pepper to taste
