cool cocktails for kicking back outdoors

Occasional torrential downpours aside, spring really is making room for summer. As Memorial Day barbecues begin to beckon, it's time to pull out the patio furniture, and get ready for the long days of sunshine and fine outdoor living. Whether you're looking for something to sip out on your deck or balcony after a long day of work, or planning a schmancy weekend picnic or barbecue with the gang, give one of these refreshing cocktails a try…

pineapple mojito
A fun twist on a warm weather favorite … use the ripest, sweetest pineapple you can get your hands on. If you're worried that your pineapple might not be at its peak, have some extra pineapple juice on hand; if the drink doesn't seem pineapple-y enough, add a good splash of juice.

2½ oz. light rum
6 big mint leaves
one ¼"-thick slice of fresh pineapple, unpeeled
2 tsps. simple syrup
soda water

serves 1

Quarter the pineapple. Set one quarter aside for the garnish; peel, core and chunk the remainder. Slide the pineapple chunks into a big glass (you'll want it to hold 14-16 oz. liquid). Add the mint leaves and simple syrup, and squash all the ingredients around for a minute or so with a muddler or wooden spoon (or regular spoon if you must) to lightly crush, until the mint leaves exude their fresh minty smell and the pineapple releases some of its juice. Add the rum, then give the whole thing a stir. Fill with ice, then top off with soda water. Garnish the glass with the reserved wedge of fresh pineapple by cutting a slit in the fruit so it will sit prettily on the edge of the glass (leave the rind on for extra eye candy appeal).

So easy, so quaffable; this is a light and not too potent drink that's perfect for a sunny day spent outdoors. No lawn games required.

1½ oz. amaretto
3 oz. orange juice
soda to top off
strawberry or orange wheel for garnish

serves 1

Shake amaretto and orange juice with plenty of ice; pour into a tall glass filled with fresh ice. Top off with soda water, and garnish with an orange wheel or strawberry.
