It’s been a long, long time since summer meant weeks on end of long lovely days spent lazing about in the sunshine, but there’s something about the season that still feels laidback to me, even as I sit at my computer working day after day, wishing I could be outside in my hammock instead. Summers are still synonymous with relaxation and enjoying the great outdoors – and when it comes to entertaining, it’s all about casual, leisurely gatherings with good friends. 

Sure, cold beer’s a fine accompaniment to barbecues and al fresco dining, but for something just a little more inspired, try these three refreshingly cool cocktails, each of which provides the perfect antidote to those steamy summer temperatures …

watermelon margarita
There's nothing quite like juicy-ripe, sweet-red watermelon and frosty margaritas to get you in the summer spirit -- this recipe pairs them together in a tangy-sweet, cool concoction that's just perfect for sipping on the patio w
ith friends.

ingredients
3 cups ripe, sweet watermelon
1/2 cup tequila (I use Sauza Hornitos, which is pretty much the best moderately-priced tequila I’ve managed to find)
1/4 cup triple sec
1/4 cup fresh lime juice
serves 4

Cut the watermelon into 1" cubes and deseed. Toss the cubes in a plastic baggie, or other container, and freeze overnight. (If you don’t have time to freeze overnight, you can add crushed ice to the blender to get a slushier texture)

Zizz all ingredients together in blender. If your watermelon isn’t sweet enough, add an ounce or two of simple syrup to taste; blend well. Serve garnished with lime wheels, in glasses rimmed with salt (if desired).
