rosemary
Rosemary is an evergreen herb that has a
very strong aroma reminiscent of pine trees (with its short, stiff needle-like
leaves, it also somewhat resembles a pine tree in appearance). It’s a commonly
used herb in Italian cooking, where it's used to flavor lamb, pork, chicken,
rabbit and bean dishes, as well as breads. Rosemary also goes well with roasted
new potatoes and butter. Make sure to chop rosemary very finely, or use whole
sprigs that can be removed before serving -- the leaves can be rather tough.
