Sun-Dried Tomato Tapenade
A variation on the traditional
Provençal olive paste.
1 can black olives
1/2 small red onion, chopped
4 sun-dried tomatoes,
re-hydrated in warm water for
2 tsp capers
4 tbsp olive oil
1. Drain the olives.
2. Combine olives, onion, capers,
sun-dried tomatoes, and olive oil in a blender or food processor (don’t overblend … it
should have a slightly chunky texture).
3. Serve it as a spread on crusty
bread, as a dip for crackers, as a sauce for pasta and couscous, or as
an accompaniment to fish/seafood.
