Mixed Greens with Strawberries, Pine Nuts + Balsamic
am a big, big fan of fruit on salads. Sweet strawberries balance
the pleasant bitterness of mixed greens and the acidity of
balsamic vinaigrette ... as good to eat as it is pretty to look
1 package ready-to-eat mixed greens of your choice
4 ripe strawberries
3 tbsp. pine nuts
for the balsamic vinaigrette:
2 tbsp. balsamic vinegar
1 tbsp. cider vinegar
1/2 tsp. Dijon mustard
1 tbsp. minced shallot
1 tsp. honey
salt + pepper to taste
1/2 cup olive oil
1. Mix all the ingredients for
the vinaigrette, except the olive oil. Gradually add in the olive oil
while you continue to beat the mixture with a fork or whisk. Mix until
the oil and vinegar are well-incorporated.
2. Arrange the greens,
strawberries and pine nuts on two plates. Serve with the dressing.
