today's special |  Stir-fried Chicken with Broccoli

I basically have two stir-fry sauces that I make -- a dark, soy-sauced based one, and this one, a peppery light sauce that goes well with chicken and seafood. You could substitute the broccoli with any green veggie -- baby bok choy, snap peas, or spinach would all make fine substitutes. 


ingredients

marinade:
1 egg white
1 tsp. white wine
1 tsp. cornstarch
1/2 tsp. salt

2 heads broccoli
2 cloves garlic
2 chicken breasts
1/2 cup chicken stock
1 tbsp. cornstarch paste (equal parts cornstarch mixed with water)
oil for stir-frying
additional salt + pepper to taste

time 
40 min, including marinating time

serves 2-3


1.
Slice the chicken thinly into bite-size pieces. Marinate in a bowl with the egg white, wine, cornstarch, and 1 tsp. salt for at least 20 minutes.
2. Peel the tough outer skin of the broccoli, if desired (you can skip this step if you're short on time.  Cut the broccoli into small, bite-size pieces.  Steam the broccoli until tender (check after 7 minutes). Meanwhile, mince the garlic.
3. Heat approximately 3 tbsp. oil in a wok over high heat. When the oil is hot (hint: to test, toss a piece of minced garlic in the oil; when it sizzles, the oil’s ready), add the marinated chicken and stir-fry until the chicken is cooked through, about 4-5 minutes, depending upon how thinly you’ve sliced the chicken. Remove the chicken from heat and set aside on a plate, draining the oil as well as possible (Hint: put your chicken in a wire-mesh strainer and sit it atop paper towels).
4. Clean out your wok. Heat 1 tbsp. oil and stir-fry the garlic for a minute or two.  Add the chicken stock and cook until bubbling. Add salt and pepper to taste. Stir in the cornstarch paste and cook until the sauce thickens. Add the chicken and cook for a minute or so (just long enough to re-heat the chicken).
5. Pour over the cooked broccoli, on a plate. Serve with steamed white rice.
