Quick Fix | Dashi 
Dashi is a traditional Japanese soup stock made with dried bonito fish flakes.  This recipe is for a very simple dashi with a very light fish flavor. For a stronger flavored broth, add another 1/4 cup of bonito flakes at the end, bring the stock back up to a simmer and cook for another 5 minutes.

ingredients
¼ cup dried bonito flakes
2 cups water
1 piece kombu (sea kelp)
time 10 min
serves --


1. Add the kombu to the water; bring to a boil.
2. Remove kombu, turn off heat and add bonito flakes. Do not stir.
3. When the flakes sink to the bottom (approx. 5-7 minutes), strain through sieve.
