Perfectly nice waffles
(spontaneous waffles)
Sometimes, I know, it’s hard to
plan ahead. You wake up in the
morning and you’re craving waffles. Right now. Right away. At times
like these, it’s good to have a reliable quick and easy waffle recipe
on hand.
1 cup
flour
1 tbsp. sugar
1/4 tsp. salt
1½ tsp. baking powder
1 egg
½ cup + 2 Tbsp. milk
2 Tbsp. light sour cream
2 Tbsp. butter |

Preheat
the waffle iron (lightly grease it with cooking oil). Melt the
butter, then let it cool for at least ten minutes. Meanwhile,
combine the flour, sugar, salt and baking powder in a mixing bowl
and stir it all together. Add the egg, pour in the milk, toss in
the sour cream, and stir well. Finally, mix in the cooled melted
butter. At this point, your waffle maker should be good to go.
Ladle the batter into the waffle grids and cook for 3-5 minutes.
Strawberry sauce
Because in my book, waffles
aren't waffles if they're served with anything besides
strawberries.
2 cups strawberries, frozen is fine
1/4 cup water
1 tbsp. sugar |

easy ways to liven up your waffle batter...
• Substitute half the white flour
with wheat flour (my favorite waffle).
• Add ½ tsp. vanilla extract to the batter
• Add 1 tsp. ground cinnamon to the batter |
In a small saucepan, add all
the ingredients and cook over medium heat. Stir it up, cover, and cook
for five minutes or so, until the mixture is bubbly and the strawberries
are soft. Break up the strawberries with a spoon, taste and add more
sugar if desired. Serve over waffles, with plenty of fresh whipped
cream.
