One of the fun things about this sauce is that it lends itself very well to improvisation -- it's easy to vary it up with whatever added ingredients you happen to have on hand. Once you've mastered the basic recipe, try experimenting with some of these flavorings…

Basil tomato sauce | Grab a handful of fresh basil. Pull off the leaves, then tear 'em up the leaves and add to the sauce.

Oregano tomato sauce | Add a heaping tablespoon of chopped fresh oregano leaves to the sauce. Alternatively, sprinkle dried oregano to taste.

Minty tomato sauce | Grab a handful of fresh mint. Pull off the leaves, then chop them up and throw into the sauce.

Lemony tomato sauce | For an even fresher, zingier sauce, add a squeeze of juice from a ¼ lemon to the sauce.

Spicy tomato sauce | De-stem, de-seed and de-rib a fresh jalapeno pepper. Mince it up finely, then add to taste. (Chiles vary widely in their heat level, even within the same variety, so it's always a good idea to add a little, taste, then add more as needed.) If fresh chiles aren't available, you can also sprinkle in some crushed red chile.

Capered tomato sauce | Chop up 2 tsps. of drained capers. Throw the capers into the sauce.

And the fun doesn't stop there. Combine herbs, add different cheeses, toss in some olives, a splash of balsamic vinegar -- make this tomato sauce your own. But do it soon, while the hot weather lasts. Summer doesn't last forever, so take advantage of all that tomato goodness while you can.
