add new life to tired old leftovers

3. Fried
Rice
Don’t know what to do with all the leftover stir-fries? Toss them into
a wok with some cooked rice, top with some scallions and sesame oil and
you’ve got yourself a tasty one-dish meal.
Ideal candidates |
cooked veggies, cooked rice, any leftover Chinese food
Necessary materials |
rice, wok or skillet, 1-2 cloves garlic (minced), 3 stalks scallions
(minced), cooking oil
Basic recipe (serves 2) |
step 1: Heat 1 tsp. oil in a
wok on medium-high.
step 2: Add garlic and scallions;
cook until fragrant (1-2 minutes).
step 3: Dump in 3 cups cooked
rice. Break it up and toss it around using a spatula.
step 4: Add the cooked leftovers,
stirring well to incorporate with the rice.
step 5: Season with salt and
pepper. Drizzle with sesame oil if desired.
4. Fried
Pasta
I don’t have a microwave, and
even if I did, you’d never catch me re-heating pasta in a microwave
… it just gets too un-appetizingly smushy. A much tastier way of
re-heating leftover cooked pasta? Simply fry it up until the noodles
have a slightly crisp texture.
Ideal candidates |
leftover pasta (the pasta can be sauced or plain, but please note:
don’t try this with cream sauces; the oil will separate out and
you’ll be left with a very greasy dish)
Necessary materials | skillet,
cooking oil
Basic recipe (serves 2) |
step 1: Heat 1-2 tbsp. olive
oil on medium. If the pasta is un-sauced, saute 2 cloves minced
garlic.
step 2: Add the leftover pasta
(you’ll want about 3 cups). Spread it out well and cook until the
pasta begins to get a bit crisp.
step 3: Flip the pasta and cook
until the other side is crisp as well.
step 4: Season with salt and
pepper. Serve with grated cheese if desired.
