parsley
Common curly-leaf parsley has an
extremely mild (read: virtually nonexistent) aroma and flavor, and is primarily
used as a garnish and breath freshener (just chew on a sprig). For better
cooking flavor, go with flat-leaved Italian parsley or French parsley (chervil), which
has a slight hint of anise flavor and combines well with other herbs. Don’t
even bother with dried parsley.
