strawberry + goat cheese salad with blueberry vinaigrette
Blueberries give a brilliant purply hue to the vinaigrette, and add a nice touch of sweetness as well, but feel free to substitute any sort of balsamic vinaigrette for the dressing.

1 6 oz. package of mixed salad greens of your choice, or 6 oz. bag of baby spinach
10-12 fresh ripe strawberries (you can also toss in some fresh blueberries for a more colorful mix, or completely substitute with blueberries, if you’re lucky enough to have access to good, cheap blueberries)
4 oz. goat cheese
1/2 cup toasted pecans (optional)

serves 6 as side dish

Wash and dry the spinach leaves, and place them in a large serving bowl. Slice the strawberries and throw them in as well. Crumble the goat cheese into the bowl, and the pecans if you’re using them, then toss it all together until well-combined. I always like to serve dressing on the side, to prevent my salad from getting to soggy and because people have wildly differing preferences for how dressed they like their greens.

vinaigrette
1/2 cup blueberries (frozen are fine)
2 Tbsp. balsamic vinegar
1 Tbsp. cider vinegar
1/3 cup extra-virgin olive oil
1/4 tsp. salt
1 tsp. sugar

Toss all ingredients into a food processor or blender, and zizz till smooth. Taste and adjust seasonings as necessary.
