Champagne is usually served in either a saucer (flat bowl-like glass) or a flute (slender glass). Personally I prefer the flute, for the simple reason that it's less likely to spill. Supposedly the bubbles also last longer in a flute; with less surface area exposed to the air, the bubbles can't escape as quickly. Generally holds 7-11 oz. liquid.
