Sweet Citrus Tofu + Chicken Marinade
(for 4-6 chicken breasts or 1 package tofu) NOTE: make sure to double this recipe if you plan to do full recipes of both the chicken and tofu.

½ - ¾ cup soy sauce
juice of one orange (Valencia if possible)
juice of one lime
2 tablespoons honey
2 tablespoons olive oil
1 T. grated ginger root
1 clove garlic, chopped

Blend all ingredients in a large bowl. Add 1 package extra-firm tofu and/or 1 breast boneless, skinless chicken per chicken-eater. Marinate the chicken and tofu in separate containers. Cover tightly and refrigerate overnight.

Spinach and Mushroom Salad
1 bunch fresh spinach, washed and de-stemmed
5 mushrooms, sliced
dressing
3 T. olive oil
2 T. white or rice vinegar
juice ¼ lemon
¼ teaspoon salt
½ teaspoon sugar

dessert
Fruit Salad with ice cream or sorbet
3 Peaches and plums
1 orange
1 pint blueberries
1 pint strawberries or raspberries
juice of ½ lime or lemon

Peel and cut up peaches, plums, melon, oranges. Add berries and pour lemon or lime juice over salad. To serve: Place a scoop of ice cream or sorbet in a bowl. Add a few spoonfuls of fruit, garnish with mint leaves.
