super-easy party foods | 1 2 3 4
continued from page 2

Our favorite pizza combos:

  • Goat cheese, roasted red pepper, red onions (or, even better, though requiring a bit more work, use caramelized yellow onions: just sauté with oil and a little sugar; once the onions are soft and golden, add a bit of balsamic vinegar and cook until the onions are sort of sticky), black olives
  • Pesto, marinated artichokes, parmesan and romano cheese shavings
  • Mixed sautéed mushrooms (combine cheap button shrooms with more flavorful shiitakes and portabellas), grated parmesan and mozzarella
  • Sliced plum tomatoes, fresh basil leaves, sliced fresh mozzarella
  • Sun-dried tomatoes, feta, spinach, kalamata olives
  • Tomatoes, Italian sausage, grated parmesan and mozzarella
  • Ham/Canadian bacon, pineapple
6. Burrito-sized flour tortillas + lavash bread: Tiny tea sandwiches, though oh-so-elegant,  just take too much work for anyone who isn't a professional caterer to want to bother with making. Large rolled-up flat breads, like flour tortillas or lavash, can be much more quickly assembled into sandwiches, then cut up into pretty pinwheels.

Layer your choice of deli meats, sliced cheese, veggies and spreads on a few pieces of large flat bread, then roll them up. The roll-ups can then be sliced into more delicate appetizer-sized servings. Skewer each piece with a toothpick and you’ve got instant finger food.

Tasty roll-up ideas:

  • Turkey, swiss, avocado, bean sprouts
  • Roasted bell peppers, sliced kalamata olives, tomatoes, lettuce, hummus or baba ghanoush
  • Turkey, cream cheese, shredded lettuce and carrots
  • Prosciutto (or other thinly-sliced ham), goat cheese, sun-dried tomatoes, fresh basil leaves
  • Sliced black olives, canned green chiles, roasted red peppers, scallions, cream cheese, cilantro

still more ideas this way!
